  1. 2 cups water
  2. 1 bay leaf
  3. 2 whole peppercorns
  4. 4 cardamom pods, crushed
  5. 1 clove
  6. 1 vanilla bean (or 1 teaspoon vanilla extract)
  7. 1 cinnamon stick
  8. 1 tsp dried ginger pieces
  9. 1/2 cup coconut milk
  10. Honey, optional, to taste
  1. Put all of the ingredients except the coconut milk in a saucepan and bring to a boil. Turn heat down to low and simmer for 10-15 minutes, until very fragrant.
  2. Stir in the coconut milk and sweeten with honey if desired.
