Blondies are the best thing to happen to the world since brownies, in my opinion. When I went Paleo I thought I’d never have a blondie again. Well, turns out I was wrong 😉 And these blondies are fancied up with zucchini, which we all know can give baked goods a lovely texture and undercurrent of flavor.
Paleo Zucchini Blondies!
So I present to you… Paleo Zucchini Blondies, and I hope you love them!

Coconut oil and coconut sugar take the place of butter and brown sugar in these easy to put together zucchini blondies. They’re delicious as a snack or light dessert that you don’t have to feel guilty about.

Ingredients
- 1 2/3 cup almond flour
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 2 eggs
- 1/2 cup coconut oil, melted
- 1/3 cup coconut milk
- 1 tsp vanilla
- 1 small zucchini, shredded
Instructions
- Preheat oven to 350 degrees F.
- Combine the almond flour, coconut sugar, baking powder, cinnamon, and salt in a bowl and whisk well.
- Beat the eggs, coconut oil, coconut milk, and vanilla together and add to the dry ingredients. Fold in the zucchini.
- Line a square baking pan (8"x8" is fine) with parchment. Spread mixture in the pan and bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Allow to cool completely before cutting into squares.

Neely, would you kindly double-check the figures for nutrition on this recipe? Looking at the ingredients, it appears to my eyes that there may be typo’s. I’m trying to figure out how this recipe could have only 1.4g carbs and 143 calories per serving. Help? (Perhaps, there were omissions in the program through which this recipe was run?) B/c If you factor in the almond flour alone, there’s a tad over 2 net carbs per serving. (Net carbs being defined that taking the total carbs minus fiber and minus sugar alcohols.) That’s not including the rest of the recipe especially the coconut sugar. While doing my own humble calculations, I came up with 16g of net carbs per serving and 317 calories. (I didn’t calculate for fat, yet.) Am I missing something? Thanks!
Looks great! How much by cup or weight would you say for the zucchini?
If…I might happen to have a bigger than small zucchini, any estimates on how much zucchini I need in cups or grams? Sorry!
