Blondies are the best thing to happen to the world since brownies, in my opinion. When I went Paleo I thought I’d never have a blondie again. Well, turns out I was wrong 😉 And these blondies are fancied up with zucchini, which we all know can give baked goods a lovely texture and undercurrent of flavor.

Paleo Zucchini Blondies!

So I present to you… Paleo Zucchini Blondies, and I hope you love them!

Zucchini Blondies
Coconut oil and coconut sugar take the place of butter and brown sugar in these easy to put together zucchini blondies. They’re delicious as a snack or light dessert that you don’t have to feel guilty about.

Ingredients
  1. 1 2/3 cup almond flour
  2. 1/2 cup coconut sugar
  3. 1 tsp baking powder
  4. 1/2 tsp cinnamon
  5. 1/4 tsp sea salt
  6. 2 eggs
  7. 1/2 cup coconut oil, melted
  8. 1/3 cup coconut milk
  9. 1 tsp vanilla
  10. 1 small zucchini, shredded
Instructions
  1. Preheat oven to 350 degrees F.
  2. Combine the almond flour, coconut sugar, baking powder, cinnamon, and salt in a bowl and whisk well.
  3. Beat the eggs, coconut oil, coconut milk, and vanilla together and add to the dry ingredients. Fold in the zucchini.
  4. Line a square baking pan (8"x8" is fine) with parchment. Spread mixture in the pan and bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Allow to cool completely before cutting into squares.
