Vanilla Nut Granola

Granola doesn’t have to have starchy oats and loads of sugar to be good. This version is made of coconut and nuts, and with a hint of vanilla, it’s the perfect snack.

Ingredients
  1. 1 cup raw pecans
  2. 1 cup raw almonds
  3. 1/4 cup shredded coconut
  4. 1/4 cup coconut oil
  5. 2 Tbs honey
  6. 1 Tbs pure vanilla extract
  7. 1/2 cup raw pumpkin seeds
  8. 1/2 tsp sea salt
Instructions
  1. Preheat oven to 300 degrees F.
  2. Put the pecans, almonds, coconut, oil, and honey in a food processor. Pulse until you have a finely ground meal. Transfer to a large bowl and stir in the vanilla, pumpkin seeds and salt.
  3. Line a baking sheet with parchment paper and spread the mixture on the tray. Bake for 20-30 minutes, until lightly browned, stirring about halfway through. Allow to cool completely before serving, and store in an airtight container.
