Ingredients
  1. 3 cups almond flour
  2. 1 egg, beaten
  3. 2 tablespoons coconut oil
  4. 1 teaspoon honey
  5. 2 large sweet potatoes, baked and mashed
  6. 1/2 cup coconut oil
  7. 1/2 cup maple syrup
  8. 1/2 cup coconut milk
  9. 2 eggs
  10. 1 teaspoon cinnamon
  11. 1/4 teaspoon nutmeg
  12. 1/2 teaspoon sea salt
  13. 1 tablespoon vanilla extract
Instructions
  1. Preheat oven to 350 degrees F.
  2. Mix the crust ingredients in a bowl until well combined. Transfer to a pie plate and press into plate, using your fingers.
  3. Bake for 10 minutes.
  4. Put all of the ingredients for the filling into a blender and blend until smooth.
  5. Pour into the pie plate and bake until well browned, about 45 minutes.
  6. Let cool completely before serving.
