Spicy Pork and Noodle Bowl
Serves 4
Full of flavor and spice, this easy soup is a perfect substitute for your favorite Asian noodle dish. If you don’t have a spiral slicer, a julienne peeler makes noodles as well.

Ingredients
  1. 2 tablespoons coconut oil
  2. 1 onion, thinly sliced
  3. 1 clove garlic, minced
  4. 2 green onions, sliced
  5. 1 red bell pepper, sliced
  6. 1 tablespoon grated ginger
  7. 1 teaspoon crushed red pepper flakes
  8. 1 pound pork tenderloin, sliced
  9. 4 cups chicken stock
  10. 1 large zucchini, cut into noodles on a spiral slicer
  11. Sea salt and fresh ground pepper, to taste
  12. Fresh chopped cilantro, for garnish
Instructions
  1. Heat the coconut oil in a large saucepan over medium heat.
  2. Add the onion, garlic, green onions, bell pepper, and ginger.
  3. Stir and cook until vegetables are soft.
  4. Add the chili flakes and pork and stir.
  5. Add the stock and 2 cups water and bring to a boil.
  6. Reduce heat and simmer until pork is cooked through.
  7. Just before serving, add the zucchini noodles and simmer for 2-3 minutes until softened.
  8. Serve topped with the cilantro.
