My Paleo Comfort Cookbook is Now Available!
As you may know, I love my cookies, cakes, breads, pot pies, and other “comfort foods”. So when I found out I could no longer eat grains, I was pretty devastated.
I knew I needed to find ways to make my favorite foods without using grains.
And so I (and my family along with me) started experimenting with coconut flour, almond flour, tapioca flour, arrowroot starch, and all kinds of other ingredients I had never before heard of.
And we were successful!
We made grain-free and dairy-free cookies, cupcakes, breads, cakes, pie crusts, crepes, pancakes, biscotti… you name it and we made it.
We made them over and over until we got them right.
Along the way we actually had to eat hearty meals, too, so we perfected things like pot pies, casseroles, “spaghetti”, and other satisfying lunches and dinners.
