Memorial Day is a bitter sweet holiday. It’s happy because we get the day off of work, but it’s also incredibly sobering to remember all of the people who’ve sacrificed for this country, including many of our family members.

Chocolate Almond Butter Cups
Prep time: 10 minutes, plus freezing
If you love peanut butter cups, this easy and healthy version will hit the spot. Sweet and chocolaty, these will curb your cravings in a healthy way.
1 cup dairy free, high quality chocolate chips
1/2 cup coconut oil
1/2 cup smooth almond butter
Put the chocolate in a pot with half of the coconut oil and heat on low until chocolate is melted, stirring every 30 seconds or so.
Put the remaining oil in a bowl with the almond butter and whisk well.
Line a mini muffin tin with paper liners. Fill each about halfway with the almond butter mixture and top off with the chocolate. Freeze until firm. Store in the freezer.
